Ingredients

  • 3 cups of sweet potatoes (baked)
  • 1 tablespoon of HerbaZest Sacha Inchi Powder
  • 1/2 cup of HerbaZest Cacao Powder
  • 1/2 cup of coconut cream
  • 1 teaspoon of vanilla extract
  • 1/4 cup of maple syrup (or to taste)
  • 1/4 teaspoon of sea salt
  • Favorite topping (e.g. fresh fruit, quinoa crispies, chia seeds, crushed nuts)

Directions

Velvety smooth and deeply chocolatey, this sweet potato mousse is a satisfying treat with a nutritious twist. Coconut adds smooth, dairy-free richness, sacha inchi contributes plant-based protein, and maple syrup brings natural sweetness. It's a feel-good dessert you'll want to make again and again.

  1. Add baked sweet potatoes to a food processor and blend until smooth.(3 minutes)
  2. Add cocoa powder, maple syrup, vanilla, sea salt, coconut cream, and sacha inchi powder. Blend again until creamy and well combined.(2 minutes)
  3. Spoon into jars and dust with a little extra cocoa powder, if desired. Chill before serving for best texture. Garnish with your favorite toppings and enjoy!(30 minutes)
