Lentil Burgers with Amaranth Flakes

Ingredients

  • 2 cups of lentil (cooked)
  • 1 cup of HerbaZest Amaranth Flakes
  • 1/4 cup of sunflower seeds
  • 1/2 teaspoon of oregano (dried)
  • 1 clove of garlic (minced)
  • 1/2 onion (small; chopped)
  • 2 tablespoons of nutritional yeast
  • 1 chicken eggs
  • 1/2 teaspoon of salt
  • 1 cup of carrot (shredded)
  • 1/4 teaspoon of black pepper
  • 4 burger bun (whole grain or gluten-free)

Made with lentils, flaked amaranth, carrots, and the seeds of the sunflower, they offer great amounts of protein, dietary fiber, and essential micronutrients. With such nutritional profile, these amaranth lentil burgers are a satisfying option for a healthy lunch or wholesome dinner.

  1. Place the lentils, carrots, onions, garlic, and sunflower seeds in a food processor. Process until more or less smooth and well-combined.(5 minutes)
  2. Add the salt, dried pepper, dried oregano, nutritional yeast, tomato paste, and egg. Mix to combine. If the mixture seems too wet, add more amaranth flakes. If it seems too dry, add a little more tomato paste.(5 minutes)
  3. Using your hands, form four patties and fry them on a hot and lightly greased skillet until brown and cooked through.(10 minutes)
  4. Serve on lightly toasted whole grain buns and garnish as desired. Enjoy!
