Ingredients

  • 2/3 cups of chia (seeds)
  • 1 1/2 cups of milk (or non-dairy)
  • 1 1/4 tablespoons of maple syrup
  • 1 teaspoon of vanilla extract
  • 4 kiwis
  • 6 tablespoons of HerbaZest Puffed Quinoa

Directions

Creamy chia pudding gets a vibrant twist with tangy kiwi purée and a crunchy topping of puffed quinoa. Lightly sweetened with maple syrup and finished with fresh kiwi slices, it's a refreshing, nutrient-rich treat that's as good for breakfast as it is for dessert.

  1. In a bowl, mix chia seeds, milk, maple syrup, and vanilla. Stir well.(2 minutes)
  2. Divide into jars, cover, and refrigerate for 1–2 hours, stirring occasionally to prevent clumping.(1 hour)
  3. Blend 3 kiwis into a purée. Slice the remaining kiwi.(2 minutes)
  4. Divide the kiwi purée among the jars, spoon the chia pudding on top, sprinkle with puffed quinoa, then finish with kiwi slices. Serve chilled and enjoy!(2 minutes)
