Light, fluffy, and full of tropical flavor, these mango donuts are made with nutrient-dense amaranth and naturally sweetened with honey. A dip in fresh mango purée and a sprinkle of shredded coconut make them a refreshing treat for breakfast or snack time. Baked instead of fried, they prove wholesome can taste amazing.
- Preheat oven to 350°F (180°C) and grease a donut pan.
- In a bowl, mix flours and baking powder.(2 minutes)
- Add melted butter, honey, yogurt, and egg. Stir to combine.(2 minutes)
- Purée half a mango and fold it into the batter.(4 minutes)
- Spoon batter into donut molds and bake for 15–18 minutes, until golden and springy.(18 minutes)
- While donuts bake, purée the remaining mango.
- Once cooled, dip each donut into mango purée and sprinkle with shredded coconut. Enjoy!(5 minutes)
