Dill & Goat Cheese-Stuffed Mushrooms

Ingredients

  • 8 mushrooms (large)
  • 1/2 onion (thinly sliced)
  • 2 cloves of garlic (minced)
  • 1 teaspoon of dill (fresh; chopped)
  • 4 ounces of goat cheese (crumbled)
  • 1/4 teaspoon of salt
  • Black pepper (a pinch)
  • 1 tablespoon of olive oil (+ more for brushing)

Directions

These melt-in-the-mouth stuffed mushrooms are a wonderful appetizer or snack. Soft and juicy mushroom caps are stuffed with a flavorful mixture of goat cheese, sautéed onions and garlic, and fresh dill. They will look stunning on the holiday table and are guaranteed to please crowds when you're entertaining.

  1. Start by preheating the oven to 425*F (220°C).
  2. Remove the mushroom stems from the caps and set the caps aside. Finely chop the stems.(5 minutes)
  3. In a skillet, sauté the onions in 1 tablespoon of olive oil until translucent. Add the garlic and cook it for another minute. Then add the chopped mushroom stems and cook everything until the liquid evaporates.(5 minutes)
  4. Take off the heat and mix in the goat cheese, salt, black pepper, and dill.(2 minutes)
  5. Brush the mushrooms with olive oil, fill them with the cheese and dill mixture, and brush them with the remaining olive oil.(5 minutes)
  6. Place the stuffed mushroom caps on a baking sheet and bake them for about 10 minutes, or until lightly browned. Enjoy right away!(10 minutes)
