Arugula Pomegranate Salad with Sacha Inchi Seeds and Honey Balsamic Vinaigrette

  • 10 ounces of Arugula
  • 1/2 cup of HerbaZest Sacha Inchi Seeds
  • 1/4 cup of Feta cheese (crumbled)
  • 1/2 Onion (red; sliced)
  • 2 tablespoons of Balsamic vinegar
  • 2 tablespoons of Honey
  • 1/4 cup of Olive Oil
  • Black Pepper (a pinch)
  • 1/2 teaspoon of Salt

Directions

While this arugula salad can be served as a side dish, it is nutritious enough to be eaten on its own. It offers a delicious blend of sweet and tangy flavors, the right amount crispiness, and a richness of nutrients, including complete protein from sacha inchi, antioxidants from pomegranate, vitamins A and K from arugula, and healthy fats from olive oil, among others. And they honey balsamic vinaigrette takes this salad to another level!

  1. Place the onion slices in a bowl with cold water for a few minutes. Then drain and dry them with paper towel.(5 minutes)
  2. Place the arugula in a large salad bowl. Add the onions, feta cheese, sacha inchi seeds, and pomegranate seeds.(5 minutes)
  3. To make the dressing, add the olive oil, balsamic vinegar, honey, salt, and pepper in a jar. Shake to combine. Taste to adjust seasoning.(3 minutes)
  4. Drizzle the salad with honey balsamic vinaigrette and toss until evenly coated right before serving. Enjoy!
