Amaranth Flake Pumpkin Porridge

  • 1/2 cup of HerbaZest Amaranth Flakes
  • 1/3 cup of pumpkin puree
  • 2 teaspoons of pumpkin spice mix
  • 1 1/2 cups of whole milk (or dairy-free)
  • 2 tablespoons of maple syrup (or to taste)
  • 1/2 teaspoon of vanilla extract
  • 1 tablespoon of walnut (for topping)


This pumpkin porridge is a quick and satisfying breakfast idea. Within minutes, flaked amaranth takes on a creamy consistency that goes well with the popular fall staple, pumpkin, along with the comforting flavors of maple, cinnamon, nutmeg, cloves, and ginger. Filling and nutritious, it will charge you for the rest of the day.

  1. Place all of the ingredients in a saucepan. Give it a stir and bring the mixture to a boil.(3 minutes)
  2. Lower the heat and simmer it for a minute or two until the mixture thickens, stirring constantly. Add a little more milk if you like a more liquidy porridge.(2 minutes)
  3. Transfer to a bowl, garnish with walnuts, and drizzle with maple syrup. Enjoy warm!
