  • 1/4 cup of brown sugar
  • 1/2 cup of HerbaZest Quinoa Flour
  • 1 1/2 cups of almond flour (or ground almonds)
  • 2 tablespoons of powdered sugar (for dusting; optional)

Directions

This simple cake is made with just five wholesome ingredients, bringing out the natural flavors of quinoa and almonds. Light and spongy with the perfect amount of sweetness, it is especially enjoyable when served with a scoop of homemade ice cream.

  1. Preheat the oven to 180°C (350°F) and line a springform pan with well-greased baking paper.
  2. Place the egg whites in a large bowl and beat with an electric mixer until they become thick and form stiff peaks.(5 minutes)
  3. In a separate bowl, whisk the egg yolks, vanilla, and sugar until the mixture is smooth and well blended.(5 minutes)
  4. Add the almond meal (or almond flour) and quinoa flour, then fold until combined.(3 minutes)
  5. Gently fold the whipped egg whites until a smooth, creamy batter forms.(3 minutes)
  6. Transfer the batter to the prepared pan and bake for 30-40 minutes, or until the cake is golden and fully set. Let the cake cool completely before serving. Dust with powdered sugar and enjoy!(40 minutes)
