This Asian carrot ribbon salad combines crisp, delicate carrot ribbons with a bright, tangy-sweet dressing for a refreshing bite. A hint of heat and sesame add depth, making it a light, flavorful side that complements a variety of meals.
- Peel the carrots and use a vegetable peeler to slice them into long, thin ribbons. Place in a large mixing bowl.(10 minutes)
- Thinly slice the onion and spring onion. Mince the garlic. Add all to the bowl with the carrots, along with the chopped parsley.(5 minutes)
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, and chili crisp (if using) until well combined.(3 minutes)
- Pour the dressing over the carrot mixture and toss gently until the ribbons and vegetables are evenly coated.(2 minutes)
- Sprinkle the sesame seeds over the salad just before serving. Adjust seasoning to taste. Serve immediately or let it sit for 10–15 minutes for the flavors to meld.(15 minutes)
