Ingredients

  • 3 carrots
  • 1/2 onion
  • 1 clove of garlic
  • 1/4 cup of parsley (fresh; chopped)
  • 1 spring onion
  • 1 tablespoon of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of honey
  • 1 tablespoon of sesame seed
  • 1 tablespoon of Homemade chili crisp (or storebought; optional)

Directions

This Asian carrot ribbon salad combines crisp, delicate carrot ribbons with a bright, tangy-sweet dressing for a refreshing bite. A hint of heat and sesame add depth, making it a light, flavorful side that complements a variety of meals.

  1. Peel the carrots and use a vegetable peeler to slice them into long, thin ribbons. Place in a large mixing bowl.(10 minutes)
  2. Thinly slice the onion and spring onion. Mince the garlic. Add all to the bowl with the carrots, along with the chopped parsley.(5 minutes)
  3. In a small bowl, whisk together the soy sauce, rice vinegar, honey, and chili crisp (if using) until well combined.(3 minutes)
  4. Pour the dressing over the carrot mixture and toss gently until the ribbons and vegetables are evenly coated.(2 minutes)
  5. Sprinkle the sesame seeds over the salad just before serving. Adjust seasoning to taste. Serve immediately or let it sit for 10–15 minutes for the flavors to meld.(15 minutes)
