I added this to a blend of gf cereal grains and the flavor was good. However, it made the hot cereal sticky and a little gummy. I will try to use less next time.

I have no idea what is meant by thickness or versatility. I guess versatility means you can add it to anything, which is true. To call these flakes is being a bit generous, Id call the consistency more a powder. The flavor is mild and not unpleasant. I purchased this to extend my granola and add some protein. I was using puffed millet which has a better flavor and texture, but very little protein. I think it would work fine mixed into a smoothie or in baking, and it good in my granola.
