About the Author

Eric Block is a Distinguished Professor of Chemistry at the University of Albany - State University of New York, and he has been a Visiting Fellow at many prestigious universities around the world, from Cambridge and Bologna to Harvard Universities. He has devoted over 35 years to studying Allium species, in particular garlic and onions, as well as the medicinal applications of their sulfur-based compounds. He has published over 220 scientific papers on these topics, which have earned him tremendous prestige as well as a permanent seat on the editorial board of the Journal of Agricultural and Food Chemistry.
