These date & goldenberry oat bars feature a chewy fruit center made with jammy dates and tangy goldenberries, all tucked between layers of buttery oat crumble. With a balance of sweet and tart flavors plus a crisp topping, these bars make a satisfying snack, dessert, or breakfast bite.
- Preheat the oven to 350°F. Line an 8 × 8-inch baking dish with parchment.
- In a small saucepan, bring water to a boil. Add the dates and goldenberries. Cook, stirring occasionally, until thickened and most liquid is gone. Remove from heat and let cool for 10 minutes.(5 minutes)
- In the meantime, whisk together the flour, oats, sugar, cinnamon, baking soda, and salt in a large bowl. Pour in the melted butter and rub it in with your fingertips until the mixture is pebbly with pea-sized clumps.(5 minutes)
- Press half of the crumb mixture evenly into the prepared pan. Spread the cooled fruit mixture over the crust. Sprinkle the remaining crumb mixture on top and press lightly to help it adhere.(3 minutes)
- Bake until golden brown on top and at the edges, 35-40 minutes. Let cool completely on a wire rack.(40 minutes)
