Ingredients

  • 1 cup of milk
  • 1/3 cup of HerbaZest Kaniwa Flakes
  • 1/4 teaspoon of ground cinnamon
  • 1 tablespoon of peanut butter
  • Salt (a pinch)
  • 1 teaspoon of butter
  • 1/2 banana (thickly sliced)
  • 2 medjool dates (pitted and sliced lengthwise)
  • Maple syrup (for drizzling, optional)

Directions

Creamy and comforting, this kaniwa porridge combines peanut butter with a touch of cinnamon. Caramelized banana and dates add rich, buttery sweetness, making a simple breakfast feel a little more special.

  1. Bring the milk to a gentle boil in a small saucepan. Add the kaniwa flakes, cinnamon, peanut butter, and salt.(3 minutes)
  2. Reduce the heat and cook for about two to three minutes, stirring frequently.(3 minutes)
  3. Remove from the heat. Let the porridge stand for two to three minutes while you prepare the topping.(3 minutes)
  4. Melt the butter in a small skillet over medium heat. Add the banana slices and cook without moving them for one to two minutes, or until golden underneath.(2 minutes)
  5. Carefully flip the banana slices. Add the dates and cook for another minute or two, gently turning the dates and spooning the melted butter over the fruit.(2 minutes)
  6. Transfer the porridge to a bowl and top with the warm banana, dates, and any butter remaining in the skillet. Drizzle with a little maple syrup, if desired.
