  • 2 tablespoons of granulated sugar
  • 2/3 cups of milk
  • 5 tablespoons of unsalted butter (cold)
  • 1/2 teaspoon of salt
  • 1 1/2 tablespoons of baking powder
  • 1 egg
  • 2 1/4 cups of all-purpose flour
  • 1/4 cup of HerbaZest Amaranth Flour

Directions

These soft and fluffy English scones get a wholesome twist with amaranth, which adds a subtly nutty, earthy flavor to the classic recipe. Easy to prepare with simple ingredients, they're delicious served warm with butter, jam, or your favorite spread.

  1. Preheat the oven to 425°F (220°C). Whisk together the all-purpose flour, amaranth flour, baking powder, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.(5 minutes)
  2. Whisk together the milk and egg. Add the mixture to the dry ingredients and mix gently until a soft, slightly tacky dough forms. Turn the dough onto a lightly floured surface and gently bring it together without kneading much. Pat it to about 1 inch (2.5 cm) thick and cut into 6 rounds.(5 minutes)
  3. Arrange on a lined baking sheet and brush the tops with a little milk. Bake for 12-15 minutes, or until well risen and golden.(15 minutes)
