Ingredients

  • 3 zucchini (large, thinly sliced)
  • 1 tablespoon of Olive Oil (to drizzle)
  • 1/2 teaspoon of Salt
  • 1/3 cup of Vinegar (white, distilled)
  • 3 ounces of feta cheese

  1. Pour 1/4 cup of olive oil over a large skillet at medium-high heat.
  2. Pan fry zucchini and garlic, stirring regularly, until almost browned. Make sure the zucchini remains firm.(5 minutes)
  3. Remove from pan and stir in vinegar, mint, salt, and pepper.(4 minutes)
  4. Sprinkle feta cheese over the dish and add mint leaves to garnish if desired.
  5. Mix in remaining olive oil.(2 minutes)
  6. Serve immediately, or place in sealed container and refrigerate.
