- In a soup pot, melt the butter and cook carrots and onions on medium heat until translucent .(5 minutes)
- Add the stock, water, ginger, salt, pepper, and orange peel. Bring to a simmer, cover, and let cook until carrots are softened.(20 minutes)
- Remove orange peel and pour soup into a blender. Blend until completely smooth, garnish with parsley, and serve. You may leave about a 1/3 of the soup chunky if you prefer.(5 minutes)
