Ingredients

  • 2 cups of onion (white, chopped)
  • 3 tablespoons of unsalted butter
  • 6 carrot (peeled and sliced)
  • 1 tablespoon of ginger (peeled)
  • 1 bitter orange (peel)
  • 2 cups of water
  • 1 parsley (sprig, to garnish)
  • 6 carrot (peeled and sliced)
  • 2 cups of vegetable broth

  1. In a soup pot, melt the butter and cook carrots and onions on medium heat until translucent .(5 minutes)
  2. Add the stock, water, ginger, salt, pepper, and orange peel. Bring to a simmer, cover, and let cook until carrots are softened.(20 minutes)
  3. Remove orange peel and pour soup into a blender. Blend until completely smooth, garnish with parsley, and serve. You may leave about a 1/3 of the soup chunky if you prefer.(5 minutes)
