  • 3 tablespoons of basil (leaves, fresh)
  • 3 tablespoons of parsley (fresh, finely chopped)
  • 1/4 teaspoon of black pepper (to taste)
  • 1/4 cup of olive oil (extra virgin)
  • 1 tablespoon of plain yogurt
  • 1/4 teaspoon of salt (to taste)
  • 2 cups of quinoa (cooked)
  • 3 tablespoons of balsamic vinegar
  • 8 pita bread (fresh)
  • 2 tomato (large, cubed)

This recipe makes enough filling for eight wraps, so its a great way to stock up and make quick meals for you and your loved ones throughout the week. The filling of this wrap is abundant in flavor, which comes together deliciously in a fresh pita.

  1. In a medium bowl, mix together the tomatoes, onion, garlic, parsley, yogurt, olive oil, and vinegar.(3 minutes)
  2. Season with salt and pepper.
  3. Line a fresh pita with the basil leaves, and then spread the tomato mixture evenly.(5 minutes)
  4. Spoon cooked quinoa on top of the mixture and wrap it neatly.(2 minutes)
