Beans and Dandelion Greens

Ingredients

  • 3 cloves of garlic (chopped)
  • 1 cup of dandelion (greens)
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of sea salt
  • 1/2 onion (red, sliced)
  • 1 tablespoon of thyme (dried, or 1 fresh sprig)
  • 10 cherry tomatoes (halved)
  • 1 cup of bean (cooked; Cannellini or as preferred)
  • 2 ounces of vegan sausages (sliced)
  • 1 teaspoon of lemon juice

Directions

With a delicious mix of flavors from sauteed onions, garlic, beans, thyme, vegan sausage, and tomatoes, this dish will comfort your whole body and surprise your taste buds. It will also keep you full for longer and enrich you with beans' protein and dandelion's cleansing compounds.

  1. Heat up the olive oil in a skillet and sauté the onions and garlic until translucent.(3 minutes)
  2. Add the vegan sausage and sauté until cooked and lightly browned.(5 minutes)
  3. Then add cooked beans, cherry tomatoes, salt, thyme, and pepper. Give it a mix and cook until tomatoes release their juices, beans come to the right temperature, and all of the flavors mix together.(10 minutes)
  4. Take off the stove and serve on top of dandelion greens. Drizzle a little bit of lemon juice over the salad right before serving. Enjoy!
